Our approach is to maximize the true flavor of the amazing grape at every turn in the winemaking process while maintaining a balance of acidity and complexity. For instance, the fermentation process for Trinitas Cellars’ recently released 2005 Zinfandel from Spinelli Vineyard preserved the wine’s unique fruit qualities; the barreling method that followed enhanced the spice flavor components, framing the fruit and adding structure to the palate. Fruit flavor characteristics in Trinitas wines include green pear, honeydew melon and passion fruit in the 2007 Sauvignon Blanc, blackberries and blueberries in the 2005 Old Vine Cuveé and dried cherries in the 2005 Cabernet Sauvignon.
